I grew up with fava beans growing in the yard and it is one of my all-time favorite beans. Once coked, my nonno used to saute them with swiss chard or chinderrappe (sp?), with chopped garlic in olive oil. I’m anxious to try this recipe with farro. I agree that it’s an underused ingredient in the US.
