Lets talk sformato! A what, you might ask? A sformato – a light, savory Italian custard-y treat. Think ‘flan’ with an Italian accent.

I first tasted one of these little beauties in the hills of Tuscany. It really was one of those – ‘OMG, what in the world is this delicious flavor-infused treat on my plate?’ We seriously need more sformati in our lives. The word literally translates to ‘unmolded’.

Italians sure know how to eat their veggies in style. I still remember the first time I crossed paths with something called a sformato.  I was traveling through Italy with a few friends and we stopped at a local trattoria in the countryside for lunch.  With no real plans for the afternoon, we spent a leisurely afternoon sitting on the outside veranda soaking up the fall sunshine. With no other patrons in sight, the cheery owner of the trattoria sat with us for a bit as we sipped a delightful local vino.

I first saw a recipe for a ‘sformata’ over the summer in an Italian cooking magazine and have been dying to try one. ‘Sformata’ basically translates to ‘flan’ and can think of a million ways that I would like to try thi technique. So when this recipe popped up in the November issue of La Cucina Italiana, I had to add it to the menu for the holiday. This was very easy to make and I made it early morning on Thanksgiving and re-heated later in the day….was delicious!
