Anyone else feeling a bit weary with this pandemic cooking? Don’t get me wrong – I *adore* cooking and my kitchen is truly my refuge but good gravy, night after night, meal after meal, my creativity has been – let’s say – less than creative lately. I usually dread the end of summer but I have to say that in this s&$show of a year, the fade to fall has been a welcome diversion from my summer repertoire of recipes.

With the weather turning to fall, we were in the mood for a woodsy mushroom risotto last evening.  The thought of the creamy rice melding with the wonderful earthy mushrooms was just perfect for an evening dinner outside under the pergola.  I added some roasted chicken for protein but simply bought a roasted chicken at the market to keep it simple.  Don’t be afraid to make risotto – sure it takes a few extra minutes but it all comes together quickly.

After spying some dried porcini in the pantry, I was in the mood for some warm, earthy mushroom soup for dinner this eve.  This soup is simple to prepare and wonderfully hearty when pared with a chunk of garlic-rubbed toasted bread. I topped the soup with some pancetta crumbles to add a crunchy bite to the soup and finished with a drizzle of fruity olive oil.  You could also perhaps stir in some freshly grated parmesan or chopped sundried tomatoes.
