The simplest of meals can feed the soul. With the Thanksgiving holiday (and all its excesses) behind us, it is the simple soups of fall that I crave. A simple meaty mushroom soup or perhaps s simple pot of leftover stock with greens and eggs stirred throughout – nothing fussy yet satisfying to my very soul. These recipes will require a bit of preparation in the kitchen but nothing excessive – a bit of time washing and chopping and rolling; a bit of quiet kitchen time after the storm of the recent holiday and in advance of the onslaught of future holiday activities.

We travel to the “toe of the boot” for our next featured ‘regione’ in Italy – rustic Calabria.  Our family visited Calabria back in 2007.  Our plan was to visit a cousin of my father, Bruno, who lived in Florence but spent his summers at his little apartment near the sea in Calabria.  Year after year, he invited us to visit. When finally we were able to make the trip, we learned that Bruno was unfortunately too sick to travel that summer so off we set determined to still have an adventure by the Italian sea.
