Hi Rose – Absolutely! The original recipe used a tenderloin. The cooking time will be much less – maybe 15 minutes, depending on the size of the tenderloin. You could also put the pears and gorgonzola in at the same time as the broth and onion since the cooking time is much less. Let me know how it turns out if you do make it this way! Grazie! Michele
