In reply to ravi. Thanks for your question. I would only leave these out of the refrigerator for the overnight pickle as mentioned in the recipe. Then serve the next day. Afterwards, you can refrigerate for up to 1 week. You can use any leftover veggies in many ways: in a light pasta sauce or in a salad. I hope this helps. Joe
