Hi Richard! Apologies for just replying as I somehow missed your comment. Firstly thank you for commenting. And amazingly, the genesis for this recipe was from Verde Mare in Scappezano!!! They called it ‘stringoli’ I believe but the sauce on this recipe is exactly how it was served at Verde Mare. Wow – small world. My mother who was born in the nearby town of Ripe made passatelli a few times a year, usually during holidays. I often eat in Scappezano at the Verde Mare A and tgriturismo and Restaurante and they usually have passatelli on the menu in both forms. Its always delicious and I want to recommend this restaurant. AS An aside, I have a second cousin in Senigallia, Franco Becci, who is a retired carrabiniere.
